Aceto Sopraffino

Renowned producers of high quality vinegar in Italy, Acetaia Ducale Estense is owned and managed by the Azienda Agricola Czarnocki-Lucheschi. The azienda is currently located in Venice and headed by Count Andrea Czarnocki-Lucheschi. Their vinegars, particularly the Aceto Sopraffino are made from CDO red grapes known as Aceto Sopraffino degli Estensi. This particular grape variety grows in the family vineyards. And instead of grape wine, Sopraffino is made from grape must and aged in hardwood barrels.

Historically a forerunner of the Balsamic Vinegar of Modena, origins of the “Aceto Sopraffino” is associated with the House of Este and the city of Ferrara.

Acetaia Ducale Estense

The Este family’s gastronomic tradition of producing balsamic vinegar started in Modena witch Francesco V. However, Francesco V was, at one time, forced to leave the said city, and the production of his acetaie stopped, as a consequence. Fortunately, centuries later, the Czarnocki-Lucheschi family was able to resume production of the “Sopraffino” balsamic vinegars. Thanks to an ancient family recipe and the descendants of the Este family, “Aceto Sopraffino” is experiencing a revival today. Only this time, it has been adapted a bit to suit the modern palate. And for 12 years after its revival in 1994, the azienda was able to more than just revive the “Sopraffino” vinegar. In fact, their 12-year Reserve Sopraffino Wine Vinegar won the 2013 Gold sofi Award for “Outstanding Vinegar”.
