Prepare the meat by removing the fattest parts. Then cut it into cubes about 1 centimeter thick.
Place the cubes of meat on the skewers.
Heat a lightly oiled cast-iron skillet on the stove, so as to easily turn the Arrosticini during cooking. Cook the skewers for 1 minute on each side on the hot grill, until a light crust has formed.
Once the meat is cooked, add a little salt and flavor them with rosemary.
Enjoy the Arrosticini hot, served with a fresh salad or cherry tomatoes.
